Avocado Chocolate Mousse

• • 2 avocados
  • 125 grams of dark chocolate (65% cocoa or higher)
  • 500 ml of whipping cream
  • 50 grams of icing sugar
  • 1/4 tsp of kosher salt
  • 2 tsp of vanilla extract

1. 1. Puree avocados in a blender until smooth
   2. Cut the chocolate into small pieces and place in bowl
   3. Add 100ml of whipping cream into the bowl with the chocolate
   4. Place the bowl over a pot of simmering water, ensuring the bottom of the bowl is not touching the water
   5. In a mixer, whip the remaining cream into stiff peaks
   6. Fold in the icing sugar, salt, and vanilla
   7. When the chocolate has melted, remove it from heat
   8. Stir in avocado puree
   9. Tale 1/4 of the whipped cream and stir it into the chocolate. Thoroughly mix
   10. Take the other 3/4 of the whipped cream and fold it into the chocolate mix
   11. Scoop into individual cups and place in the fridge
