Ingredients
- Yield:
- 6 Tacos

Short Rib
- 180g Short Rib
- 60kg Onion
- 30g Celery
- 30g Carrot
- 3g Garlic
- 300ml Dark Chicken Stock
- 20ml Red Wine
- 1 Thyme Springs

Crèma
- 50ml Sour Cream
- Lime, Juice & Zest
- Salt TT

Grilled Pineapple Salsa
- 50ml Diced Grilled Pineapple
- 20 ml Olive Oil
- 1tbsp Cilantro
- 1 Roma Tomato
- 1 Lime, Juiced
- 1 Red Bell Pepper
- 1/8 Red Onion
- 1/4 Poblano Brunoise
- Salt TT

Molé
- 100ml Chicken Stock
- 100ml Cilantro
- 200ml Tortilla Chips
- 20ml Raisins
- 10ml Olive Oil
- 2ml Cocoa Powder
- 2ml Canned Chipotle
- 1tsp Chili Powder
- 2tsp Sesame Seeds
- ½ tsp Brown Sugar
- ¼ tsp Cumin Seeds
- ½ tsp Coriander Seeds
- 1tsp Oregano
- ¼ tsp Ground Cinnamon
- 2 Tomatoes, Diced
- ½ Onion, Diced
- 10 Cloves of Garlic
- 1 Ancho Chili
- Salt TT
Preparation

Short Rib
- Season and sear short rib.
- Combine all ingredients in a deep pan, ensure short ribs are fully covered.
- Cover pan in tin foil.
- In a 300°F oven, cook until tender, 4-6 hours.

Grilled Pineapple Salsa
- Lightly grill diced pineapple over medium heat.
- Combine small diced pineapple, tomatoes, bell peppers and red onion.
- Add in cilantro, lime juice, olive oil, poblano, salt.

Molé
- Sauté onions and garlic until soft, add in chilis, sesame seeds, cumin, coriander, cinnamon, continue cooking for 5 minutes.
- Add in chicken stock, raisins, brown sugar, oregano, tomatoes, simmer for 30-45 minutes.
- Add in fresh tortilla chips and cilantro, simmer for 5 minutes.
- Blend in blender until smooth.

To Serve
- In a sauce pan, heat up short rib with molé. Ensure short rib is moist and well combined with molé.
- Lightly grill six taco tortillas on one side.
- Place tortillas into taco stand.
- Place approximately 1-1.5oz of short rib in each tortilla
- Top with cilantro pineapple salsa.
- Drizzle with crèma.
- Serve & Enjoy!
