Maui-Style Sweet Chili Sauce

Ingredients

Yield:

1 bowl of dipping sauce

• • 1 Cup Maui Pineapple, diced into ¼ inch pieces
  • 1 Cup Sugar
  • 1 Cup Rice Vinegar
  • 2 Tsp. Sambal Oelek (Garlic Chili Paste)
  • 1 Pinch Kosher Salt
  • 1 Shallot, chopped fine
  • 2 Cloves Garlic, chopped fine
  • 1 Tbsp. Cilantro, chopped

1. • Combine all ingredients except the cilantro and boil; simmer for 2 minutes.
   • Cool and add cilantro.
