Roof Top Honey and Basil Collins

• • 4 Large Fresh Basil Leaves
  • 1 ½ oz Plymouth Gin
  • ¾ oz Fresh Lemon Juice
  • ¾ oz Roof Top Honey Syrup
  • 1 oz Soda

1. 1. Boil equal parts honey and water for roof top honey syrup (let cool).
   2. Start by muddling 3 fresh rooftop basil leaves in bottom of mixing glass.
   3. Add roof top honey syrup, freshly squeezed lime juice and gin.
   4. Top with ice and shake vigorously for 6-8 firm shakes.
   5. Double strain from cocktail shaker into tall highball glass full of ice and top with soda.
   6. Garnish with basil and enjoy!
