Ingredients
- Yield:
- Makes 12- 3oz cakes
San Francisco Dungeness Crab Cakes:
- 2 lbs of dungeness crab meat - cooked
- 1/2 red onions brunouise (1/8" x 1/8" x 1/8")
- 1 red peppers brunoise
- 1 yellow peppers brunouise
- 1 fresh pasilla peppers brunouise
- ¼ cup of lime zest
- 1/2 bunches of cilantro
- ¼ cup of lime juice
- 1 cup of mayonnaise

San Francisco Dungeness Crab Cakes:
- Mix all ingredients in a bowl and mix until it is stiff enough to mold into shape, but not too stiff.
- Weigh out to 3 oz portions and shape with a ring mold or ramekin.
- Heat lemon oil in a frying pan until it begins to smoke.
- Turn down temperature a touch.
- Place crab cakes into frying pan and sear.
- When cakes are golden brown flip and sear other side until same & serve.
