Queso Fundido with Chorizo, Fairmont Mayakoba style

Ingredients

• • 200 gr. Oaxaca cheese
  • 60 gr. goat cheese
  • 40 ml. Poblano pepper sauce
  • 4 Corn tortillas
  • 4 Flour tortillas
  • 2 Sprigs of fresh epazote, chopped
  • 40 gr. of chorizo, diced
  • 30 gr. red pepper, diced
  • 30 gr. green pepper, diced
  • 30 gr. Onion, diced
  • 4 slices of Portobello mushroom
  • Salt and pepper to taste

1. 1. Prepare kebabs with the sausage, mushrooms, red pepper, green pepper and red onion
   2. Roast the kebabs, season with salt and pepper
   3. Mix the Oaxaca cheese, goat cheese and the epazote in an oven safe plate
   4. Melt the cheese in the oven or microwave
   5. Pour the Poblano pepper sauce over the melted cheese
   6. Serve with warm corn and flour tortillas
