Curried Yogurt Bows

• • 1 pkg (340 g) Catelli Smart® Bows
  • 2 – 3 chicken breasts, grilled or pan roasted
  • 1 mango, diced
  • 1/2 red pepper, diced
  • 1 cucumber, diced
  • 2 green onions, sliced

• Curried Yogurt Dressing:

  • 2 cups (500 ml) Greek style plain yogurt
  • 1 tbsp (15 ml) curry powder
  • 1 tsp (5ml) Siracha sauce or any other hot sauce
  • Handful of cilantro, roughly chopped
  • Juice of half a lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

1. 1. Combine all ingredients for curried yogurt dressing, mix well.
   2. Cook pasta according to instructions on the package. Drain and rinse well to cool.
   3. Combine the pasta with cooked chicken, mango and vegetables in large mixing bowl.
   4. Add half of the yogurt mixture first, combine and add more to taste. Season with salt and pepper.
   5. Garnish with fresh cilantro.
