Apricot Thyme & Maple Stuffing

Ingredients

Serves 10-12

• • 1 loaf sour dough or 1lb of diced bread (no dark bread)
  • 1 tbsp garlic; chopped
  • 1 large onion; diced small
  • 1 large carrot; diced small
  • 4 celery sticks; diced small
  • 2 bay leaves
  • 1 tsp dijon
  • 5 tbsp dried apricot; chopped
  • 1 tbsp fresh chopped thyme
  • 100 ml pure maple syrup
  • 100ml dry white wine
  • 250 ml chicken stock or broth
  • 3 tbsp butter
  • to taste kosher salt
  • to taste ground black pepper

1. • Sauté onion and garlic in butter until golden brown. Then add diced carrot, celery and bay leaves. Cook until the carrots are tender.
   • Stir in the apricots, sauté for 2 minutes. Add white wine. Reduce to ½. Then add your chicken stock or broth. Bring to a boil. Simmer for 3 minutes.
   • Stir in the diced bread, thyme, maple syrup and dijon. Add salt and pepper to taste. Mix thoroughly. Add extra chicken stock or broth if required (if stuffing is too dry).
