Summer is just around the corner and Mont-Tremblant is just about to welcome the 3rd edition of Ironman Mont-Tremblant, with 3 amazing events: Ironman 70.3, Ironman North-American Championship and Ironman 70.3 World Championship. As Fairmont Tremblant gets ready for these major sporting events with volunteer teams and special attention to our athletes, we thought we'd inspire everyone to add some health and wellness to their daily routine with a recipe offered to us by our very own Sous Chef Florent Risser. Here is The "Risser Homemade Granola" recipe.

Risser Homemade Granola
For about 9 cups

- ¾ cup Quebec Maple syrup
- 1 tsp vanilla extract
- ½ tsp T salt
- ½ cup vegetable oil
- 5 cups of rolled oats (quick cooking kind)
- 1 cup chopped walnuts
- 1 cup almond sticks (or blanched almonds chopped )
- ½ cup raisins
- ½ cup dried cranberries
- ½ cup of pumpkin seeds
- ½ cup semi-sweet chocolate chips
- ½ cup dried unsweetened coconut

Preparation:

1. Preheat oven to 325 ° F.
2 . Toast the almonds in the oven for about 10 min
3. Remove almonds and set aside in a bowl
4. Add oats to the bowl
5 . Over medium heat, bring Maple Syrup and oil to a gentle boil
6. Add vanilla extract and salt
7. Pour syrup - oil immediately onto oat mixture and mix
8. Spread mixture onto baking sheet
9. Bake for about 30 minutes , stirring every 10 minutes until golden brown
10. Allow to cool at least one hour
11. Add the remaining ingredients
