Almond Pound Cake

Ingredients

Yield:

Makes 2 large loafs.

• • 1 lb butter
  • 1 ib sugar
  • 1 lb ground almonds
  • 1 lb flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons salt
  • 12 eggs
  • 3 apples grated
  • 1/2 cup candies mixed orange and lemon peel

1. Mixing Details

   • Cream butter sugar together until light and fluffy.
   • Sift flour, salt, baking powder together and mix in ground almonds.
   • Add eggs to creamed butter and sugar one at a time
   • Add to the egg butter mixture the mixed peel and apples.
   • Gradually add flour and almond mixture.

2. Baking Instructions

   • Bake at 325 F in lightly greased and floured loaf pans.
   • Bake for 45-60 minutes or until a tooth pick can be inserted in the center and comes out clean.
   • Allow to cool slightly before unmolding
   • Allow to cool completely before serving
