Ingredients

Tuna Tataki:
- 3.5 oz. Tuna
- 0.5 oz. Toasted amaranto
- 1 oz. Soy sauce
- 1 oz. Agave syrup

Salad:
- 1 bunch frisse
- 1 bunch radiccio
- 1 pc. Sliced radish
- 0.5 oz Sliced jicama
- 0.5 oz. Sliced carrot

Lentil pita:
- 1/2 pc. Pita bread
- 2 oz. Lentils
- 3 pcs. Cherry tomato cut in half
- 1 bunch parsley
- 1 tbsp. Lemon juice
- 1 tbsp. Olive oil

Goat cheese pita:
- 1/2 pc. Pita bread
- 3 oz. Cream cheese
- 3 oz. Goat cheese
- 4 pcs. Chopped chive
- 1 pinch Lemon zest
- 1 tbsp. Lemon juice

Hummus pita:
- 1/2 pc. Pita bread
- 5 oz. Chickpeas
- 1 pinch Chopped parsley
- 1 tbsp. Lemon juice
- 1 tbsp. Turmeric
- 1 tbsp. Sesame oil
Preparation

- 1.1. Place 2oz. of lentils into a large pot, cover with water and boil at high heat for 20 minutes. Once boiled, drain excess water and set aside to cool down.
- 2. Grill all pita bread with a bit of olive oil. Once grilled, cut into 4 equal parts and place aside.
- 3. Cover the entire piece of tuna in amaranto seeds and slice into thin pieces. In a small bowl mix the soy sauce and agave syrup until well mixed. Pour sauce over Tuna pieces and set aside.
- 4. Mix all salad ingredients in a medium bowl.
- 5. Back to our Lentil Pita, in a medium bowl mix your cooked lentils, cherry tomatoes, chopped parsley, lemon juice and olive oil. Take the mixture and fill 2 of your cut pita bread pieces. Place on upper right corner of your bento box.
- 6. For your goat cheese pita, mix cream cheese, goat cheese, chopped chives, lemon juice and lemon zest and once mixture is set; fill other two pieces of cut up pita bread. Place in upper middle section of your bento box.
- 7. For the hummus only pieces, first make hummus by blending your chickpeas with the rest of the ingredients in a food processor or blender. Ensure to mix until smooth and then fill inside the rest of your pita bread pieces. Place on the upper right section of your bento.
- 8. To finish off our lovely bento box, place the tuna pieces in the lower left corner and serve your healthy lunch right away. Enjoy!
