Ingredients
Yield:
1lb Manila Clams
4 Cloves Garlic (minced)
2 Shallots (minced)
1/2 Stalk Lemongrass (sliced)
2 oz. Ginger (peeled)
1 oz. Sambal
4 oz. Butter
1 Cup Dry White Wine
1/2 Cup Cilantro (chopped)

15 Minutes
Total Time:
Sweat Garlic and Shallots in 2 oz. Butter over low heat until translucent, about 3 minutes
Add Lemongrass, Ginger, and Sambal to the pan, increase heat to medium, and sauté for 2 minutes more
Add Clams and White Wine, and cover. Cook until all Clams have opened and remove cover
Add remaining Butter and season to taste with Salt and Pepper
Finish with Cilantro. Serve with Grilled Baguette
