Strawberry Gazpacho

Ingredients

• • 1.5 Pounds Strawberries (De-stemmed)
  • 6 Ounces English Cucumber (Peeled & Seeded)
  • 4 Ounces Red Bell Pepper
  • 2 Tablespoons Balsamic Vinegar
  • 1.5 Ounces Shallots
  • 1 Teaspoon Balsamic Glaze
  • Salt & Pepper

1. 1. Wash all fruits and vegetables and give them a rough chop.
   2. Add all ingredients to a high speed blender and puree until smooth.
   3. Salt and pepper to taste.
   4. Chill before serving.
   5. Pour 6 ounces into a bowl, drizzle with balsamic glaze and garnish with croutons and micro greens.
