Smoked Cranberry Honey

500g fresh cranberries
2L raw honey
1 oz fresh sage
1 oz cognac
apple wood chips for smoking

Cooking
Place fresh cranberries in smoker on racks and let cold smoke for 1/2 hour
Once smoking is complete, place cranberries, honey, cognac, and sage in a saucepan and bring to a simmer
Simmer on low heat for 25 minutes, ensuring not to reduce or burn the honey
Whisk honey to break up cranberries, then let sit for 24 hours to complete the fusion process
Strain honey through a fine strainer and store in a jar until ready to use
Pair the final product with cheese plates, roasted meats, or add to your favourite herbal tea
