From Chef Graham Smith: "With this dish you can use almost any starch, I prefer to use a brown rice or poached fingerling potatoes tossed in fresh herbs. The plating of the dish can be anything you like. This is where you can have some fun with the plate design. I usually have the potatoes on the bottom topped with the salmon and the fennel salsa on top of the fish.
