Salmon Tar Tar on Taro Root Chip

• • Fresh Salmon 454 gm
  • Chopped Parsley 2 Tbsp
  • Chopped Shallots 2 Tbsp
  • Chopped Dill 1 Tbsp
  • Juice of 1-2 Lemons
  • Brunoise Avocado 2 Tbsp
  • Sesame oil 2 Tbsp
  • Soy Sauce 1-2 tsp
  • Yuzo- (Japanese citrus juice) 1 tsp

1. Taro Root Chip

   1. Peel, slice and cut taro root into 1” by 2” pieces. Keep thin.
   2. Fry Chips @ 325 F.
   3. Using a spider remove from oil, place on paper towel, season and allow to dry.

2. Tar Tar

   1. Finely chop the salmon and reserve wrapped in the fridge.
   2. Combine all cut ingredients except the avocado, and mix well.
   3. Season with, salt and pepper.
   4. Prior to service cut and add the avocado so as not to go black with oxidization.
   5. Add lemon juice & yuzo mixed with sesame oil & soy sauce.
   6. Check seasoning and quenelle a Tbsp per portion on fried taro root chips and garnish with coriander cress or similar micro green.
