Mauka Harvest Salad with Lilikoi-Vanilla Vinaigrette

• • 8 cups assorted young greens, whole leaves, washed
  • 1 cup Hana cherry tomatoe, halved
  • 1 cup baby pear, halved
  • 2 cups Pohole fern shoots, cut into 2" lengths
  • 1 cup Carrots, shaved
  • 2 tbsp macadamia nuts, toasted
  • 2 each lilikoi (passionfruit), flesh removed
  • 1/4 vanilla bean, scraped
  • 1/4 cup rice vinegar
  • 2 tbsp raw sugar
  • 3/4 cup olive oil

1. Mauka Harvest Salad

   1. Chill all ingredients prior to preparation

2. Lilikoi-Vanilla Vinaigrette

   1. Place lilikoi flesh, vinegar, sugar, and vanilla bean in blender and process on medium
   2. Turn blender to low and add olive oil in a thin stream to emulsify.

3. Plating

   1. Place greens on chilled plate. Arrange tomatoes, fern shoots, heart of palm, and carrots on and around leaves
   2. Drizzle vinaigrette over salad immediately prior to serving and garnish with macadamia nuts
