Mason Street Farm Salad

  • 100g Organic Artisan Greens
  • 50g Sliced Baby Cucumber
  • 30g Heirloom Tomatoes
  • 5g Shaved Radish
  • 15g Shaved Heirloom Carrots
  • 30ml Honey Carrot Lavendar Dressing
  • Salt & Pepper

• Honey Carrot & Lavender Dressing

  • 50ml Chardonnay Vinegar (or Champagne Vinegar)
  • 100g Carrots, peeled and sliced
  • 100ml Empress Honey
  • 50ml Dijon Mustard
  • 150ml Grapeseed Oil
  • 1g Orange Zest
  • 1g Zest of Lemon
  • 1 Pinch Fresh Picked Lavender Petals
  • Salt & Pepper

1. Honey Carrot Lavender Dressing

   1. Place carrots in small pot and cover with water and honey. Bring to a gentle simmer until carrots are soft. Remove from heat and set aside to cool in the liquid.
   2. Once carrots are cooled, strain off liquid and place carrots in blender with vinegar and dijon mustard. Reserve the sweet cooking liquid to balance sweetness at the end.
   3. With blender running, slowly stream in grape seed oil to emulsify together. Blend in pinch of lavender petals, lemon zest and orange zest.
   4. To balance sweetness, stream in reserved honey liquid to your taste preference.
   5. Season to taste with salt and pepper.
   6. Toss all fresh salad ingredients with honey carrot lavender dressing and season to taste.
