Manitoba Chicken, Morden Apple and Celery Root Salad

• • 1 local apple shredded
  • 1 chicken breast pan seared and roasted.
  • Fresh Celery Root shredded – equal amount of apple
  • 1/2 cup of mayonnaise
  • 1/2 cup Crushed Walnuts, reserve some for garnish
  • 1/4 cup sliced red grapes
  • 1” vol-au-vent shells
  • Salt and Pepper to taste

1. 1. Dice the roasted chicken, reserving some for the garnish.
   2. Mix all ingredients with mayonnaise until desired consistency.
   3. Season with salt and pepper.
   4. Fill vol-au-vent shells and garnish with chicken, nuts and sliced grapes.
