Yield:
250ml
4 fresh oranges
250ml (1 cup) ruby port
110g (1/2 cup) white sugar
1 tsp Dijon mustard
220g (1 cup) fresh cranberries

Cooking
Thinly peel the rind of 2 oranges and cut into julienne
Blanch the peel in boiling water, drain and repeat. Then set aside
Segment all 4 oranges, reserving their juice. Place segments into a bowl and set aside
Combine the juice, rind, port, sugar, and Dijon mustard in a saucepan
Stir to mix the ingredients and bring to a boil over medium heat
Cook for 15 minutes or until reduced to 1/3 cup
Add cranberries and cook for 5 more minutes, or until cranberries are tender
Pour over oranges and cool
