Ingredients
Yield:
2 1/2 cup of all-purpose flour
2 eggs
3 egg yolks
1/2 teaspoon salt
1 teaspoon of olive oil
Semolina for dusting

In a bowl, mix the sifted flour and salt together and make a well
Add the slightly whisked eggs and yolks and olive oil in the centre and mix for 3 to 4 minutes
Dust with semolina flour and let rest for 1/2 hour covered with a kitchen towel
Dust a table surface with a little semolina flour and roll the dough flat until thin enough to go through a pasta machine and mold into desired shape
If making a stuffed pasta, to have dough stick together, simply brush with an egg wash mixture of equal part yolk and water
