Pear and Vanilla Mocktail

• • A large, juicy pear – needs to be quite soft
  • 20ml pineapple juice
  • A splash of sparkling mineral water
  • 20ml of Monin vanilla syrup
  • 15ml of lemon juice
  • 30ml of egg white
  • Three thin slices of pear to garnish

1. 1. De-seed your pear and cut into pieces, placing into your shaker
   2. Muddle fruit, mashing to a pulp
   3. Add the pineapple juice, vanilla syrup, lemon juice and egg whites
   4. Fill the shaker with ice and shake quite hard to mix the ingredients fully with the egg white
   5. Double strain into a chilled glass and top with sparkling mineral water
   6. Add the garnish
