Great Canadian Grilled Three Cheese Sandwich

Ingredients

• Bengal Lounge Grilled Cheese & Shallot Jam recipe

  • 500 gr Shallots
  • 500 mL Sherry Vinegar
  • 50 gr Empress honey
  • 10 gr Kosher Salt
  • 5 gr Ground black pepper
  • 10 gr Mustard Seeds
  • 100 mL Sherry Vinegar
  • 50 gr Brown Sugar
  • 10 gr Kosher Salt
• • 2 thick cut slices of bread
  • 40gr of Smoked cheddar
  • 40gr of Gouda
  • 40gr of Mozzarella

1. Method

   1. Slice shallots thinly with a knife and then place in a non reactive bowl.
   2. Combine honey, salt and sherry vinegar bring to a boil and pour over shallots.
   3. Allow to sit for 24 hours.
   4. Combine pickled shallots, all other ingredients, cook over a low flame until a jam like consistency is achieved.
   5. Cool down on counter and use in the grilled cheese, this will add a nice little sweet & sour touch.

2. How to build the sandwich

   1. Use 2 thick cut slices of bread from your favorite style loaf of bread (we use sourdough).
   2. Lightly butter both sides and place 40gr of Smoked cheddar, 40gr of Gouda, 40gr of Mozzarella. The cheeses could be sliced or shredded at your convenience.
   3. Spread a layer of jam under the top slice before closing the sandwich.
   4. Place in a non-stick pan at medium-low heat and cook for 6 minutes on both sides or until the bread is golden brown & cheese is melted. Serve with salad, fries or your favorite soup. Enjoy!
