Waterlot Inn's Truffled Boursin Mac & Cheese

• Cheese Sauce Ingredients

  • 2 cups milk
  • 2 cups heavy cream
  • 2 ounces butter
  • 1/3 cup flour
  • 1/2 tablespoon garlic minced
  • 4 ounces grated cheese mix (swiss, provolone and cheddar, equal parts)
  • 1/4 cup grated parmesan
  • 1/2 wheel of boursin
  • 1 1/2 teaspoons of salt
  • truffle oil

• Pasta Ingredients

  • 14 ounces dried pasta uncooked
  • 12 ounces cheese mix

1. Preparation

   • Melt butter, add flour to make a roux. Gradually stir in the scalded milk and cream. Add garlic paste.
   • Simmer mixture on low heat for about 20 minutes. Remove from heat and whisk in cheese. Add salt and pepper.
   • Let sauce cool and combine with the cooked pasta.
   • Portion each dish in casserole dishes and cover with grated cheese mix on top.
   • Place dish in oven until hot through and cheese is nicely colored. Drizzle with truffle oil.
