Vegetable Pasta with Mexican Sauce

• Pasta Ingredients

  • 2 cups of pasta (penne variety)
  • 1 1/2 cups vegetables diced (trio peppers, tomato, broccoli, asparagus, zucchini, mushroom & carrots)
  • 1 tbsp. garlic, chopped
  • 1 tbsp. onion, chopped
  • 1 tbsp. cilantro chopped
  • 1 tbsp. parmesan cheese
  • Olive oil

• Spicy Mexican Tomato Sauce Ingredients

  • 2 cups of peeled dice tomatoes
  • 1/2 tsp. tomato paste
  • 1 tbsp. onion chopped
  • 1 tbsp. garlic, chopped
  • 1/2 tsp. jalapeño pepper chopped
  • 1 tbsp. coriander
  • 1/2 cup tequila
  • 1/2 tsp. sugar
  • 1 tbsp. chopped scallion
  • salt and pepper to finish

1. Sauce Preparation

   • Sauté garlic, onion, & jalapeño pepper in olive oil
   • Add tomato paste, tequila & diced peel tomatoes, and bring to simmer.
   • Add the sugar, and cilantro; bring to a simmer for 3-5 minutes.
   • Add the chopped cilantro, scallion & season; bring to cool.
   • Sauté the onion & garlic with olive oil, add the vegetables.
   • Mix the pasta (after boiled) with vegetables & add the spicy tomato sauce.
   • Garnish with parmesan cheese, black olives & chopped cilantro.
