Three Potato Risotto

Ingredients
- Yield:
- Serves 2
- 1 clove of garlic minced
- 1 shallot minced
- 3/4 cup of 35% cream
- 1/4 cup white wine
- 1 tsp chopped fresh thyme
- 1 tsp chopped Italian parsley
- 1/2 cup purple potatoes (small dice)
- 1/2 cup sweet potatoes (small dice)
- 1/2 cup yukon gold potatoes (small dice)
- 2 tbs shaved parmesan cheese
- 2 tbs olive oil
Preparation

Cooking Instructions
- In a medium sized sauce pan, heat the olive oil on a medium heat.
- Add the shallots and garlic and allow them to sautee for 2 minutes.
- Add the white wine and allow to come to a simmer while reducing the heat slightly.
- Add the 35% cream and continue to simmer until the cream reduces by half.
- Add all varieties of diced potatoes and simmer for 2 minutes.
- Add herbs and parmesan cheese.
- Reserve until plate is ready to be served.
