Salsa Fresco a la Fairmont Hotels & Resorts

• • 5 beef steak tomatoes, small dice
  • 1 jalepeno seeded and minced
  • Juice of 4 limes
  • ½ red onion, small dice
  • 2 cloves garlic, minced
  • ½ cup cilantro, washed and chopped
  • ¼ cup fresh mint, washed and chopped
  • Salt and fresh ground black pepper

1. • Combine all ingredients and let marinate 4 hours or overnight.
   • Suggested serving on it's own with nacho's or as a condiment for Roasted or Grilled Beef, Chicken or Fish!
