Pollo alla Cacciatora

  • 4 chicken thighs with bone
  • 2 oz pancetta diced
  • 2 tbsp shallots chopped
  • 2 oz onion julienne
  • 2 garlic cloves chopped
  • ½ c white wine
  • 2 c tomato sauce
  • 2 oz mushrooms
  • 3 to 4 c potato puree
  • 4 tbsp olive oil
  • 1 c chicken stock (add as needed if liquid reduces too quickly)
  • Fresh oregano for garnish

1. Preparation

   • Cut the chicken into five small pieces.
   • Season the pieces with salt and pepper and then flour.
   • Pan fry it in the olive oil until it has a nice golden colour.
   • Add the chopped shallots, onion, garlic and pancetta and cook until soft.
   • Add white wine, mushrooms (sautéed previously with chopped shallots and garlic in olive oil).
   • Add tomato sauce and chicken stock and put it in the oven at 350F (176C) for about ten minutes.
   • Season at the end with fresh oregano.
   • Serve the chicken with potato puree.
