Guinness Braised Beef Short Ribs

Ingredients for 6 Portions
- 6 Beef Short Ribs, 10oz cut, boneless
- 1qt Guinness beer
- 2qt Veal or beef stock, unsalted
- 2 Cinnamon sticks
- 2 Cloves
- 2oz Rosemary, fresh
- 2 Bay leaves
- 1tbsp Cracked black pepper
- 8oz Slab bacon, apple wood smoked
- ½ pound Carrots, peeled and diced
- ½ pound Celery, peeled and diced
- 1 pound Onions, peeled and diced
- 2tbs Garlic, Chopped
- 1 Orange, Zest only
- 4tbs Canola Oil
- 2tbs Flour, AP
- Tt Kosher salt
Preparation

Method
- Combine Guinness and spices. Marinate Short ribs overnight
- Pre-heat oven to 275 degrees F
- Remove beef from marinade, pat dry. Reserve marinade
- Sear all short rib pieces and slab bacon in canola oil from all sides until brown in a large braising pan (Dutch oven or similar)
- Remove beef and bacon, set aside
- Roast vegetables in same pan until light brown. Add flour and mix well
- Deglaze with Guinness marinade, reduce by ½
- Add veal or beef stock, reduce by ½
- Add seared short rib pieces and slab bacon. Bring to a boil.
- Reduce heat, cover tightly and transfer to an oven at 275F
- Braise for 2.5-3 hours or until done (when a wooden skewer inserted indicates almost no resistance)
