- 1 large rack of lamb
- 1 tbs dijon mustard
- 1/2 teaspoon ground espresso
- 1/2 cup of fresh bread crumbs
- 1tbs canola oil
- Salt & pepper
Preparation

Lamb Ribeye
- Remove the bones from the rack of lamb.
- Season the lamb with sales and pepper.
- Heat the canola oil on high heat in a medium sized, heavy bottomed frying pan.
- Once in the pan, sear the lamb by turning it on all sides until brown.
- Remove from pan and allow to cool.
Espresso and Breadcrumb Crust
- Mix the espresso coffee and breadcrumbs together.
- Apply the dijon mustard by painting it on the lamb directly.
- Coat the lamb with the bread crumb and espresso mixture.
- Be sure to press mixture into the lamb to ensure it adhears to the dijon mustard.
Final Steps
- Once prepared, bake the lamb at 400F for 8-12 minutes.
- After lamb has reached desired doneness, rest the lamb outside the oven for a minimum of 5 minutes.
- By setting the lamb out, it will result in a more tender product.
