Our holiday gift to you – Chef Alessandro’s recipe for a perfectly roasted turkey (the secret is the brine...and the beer)! Tips from Chef: You can either get a whole turkey if you are one for the tradition of carving a turkey, or you can ask your butcher to sell you the turkey de-boned. Make sure you ask him or her to give you the bones though, for when you make your gravy. It’s a little more work if you get it de-boned because you have to roast the bones to make your gravy, but the turkey will be more evenly cooked and moister.
