Ingredients
- Yield:
- Serves 2
- 1 fillet yellow tail snapper
- ½ cup fresh rock shrimp (cooked 30 seconds in simmering water)
- ½ cup fresh bay scallops (cooked 30 seconds in simmering water)
- ¼ cup chopped fresh cilantro
- ¼ cup chopped sliced red onion
- 4 limes juiced (1 zest)
- aji amarillo paste to taste (or replace with other chopped hot pepper)
- salt
- fresh ground pepper
Preparation

- Cut the snapper in small pieces.
- Mix the fish with the shrimp, scallops, onions, and zest.
- In another bowl mix approximately ½ teaspoon aji amarillo with the juice of the lemons, limes, salt and pepper.
- Add the aji amarillo seasoning to the seafood to taste. Allow to marinade for 10 – 15 minutes and add the cilantro.
- Enjoy with or without crackers of your choice!
