Braised Red Cabbage (Rotkhol) Recipe

Ingredients

• • 4 tablespoons canola oil
  • 1 head red cabbage, core removed and sliced thin
  • 1 onion, chopped
  • 2 apples, peeled, cored and cut into slices
  • 1 tablespoon brown sugar
  • 1 cinnamon stick
  • 6 cloves
  • 1/2 cup dry wine, white or red
  • 1/2 cup water
  • 1/4 cup cider vinegar
  • 1 bay leaf
  • 6 whole cloves
  • 2 strips of Bacon (optional)
  • 1 tablespoon butter
  • 1 teaspoon cornstarch

1. • Heat the oil in a large braising pan over medium-high heat.
   • Once it is warm, but not too hot, add onion and Bacon and sauté slightly.
   • then add apple, brown sugar, cinnamon stick, cloves, wine, water, vinegar, bay leaf, cloves and salt. Stir.
   • Bring to a boil.
   • Reduce heat, cover and simmer for at least 1 hour. Stir once.
   • Remove the lid and continue to cook, allowing most of the liquid to evaporate, about 35-45 minutes, stirring occasionally.
   • To finish put in the butter and stir well then mix in the cornstarch to bind the remaining liquid and give a shiny glaze.
   • Remove cinnamon stick, Bacon, bay leaf and any cloves you may find before serving.
