Bermuda Codfish Cakes

  • 1 lb. cod fish (boneless) salted
  • 1 lb.peeled potatoes
  • 4 oz. chopped onions
  • 1 teaspoon hot chopped chili peppers
  • Thyme, salt and pepper to season
  • 4 oz. chopped parsley

1. Preparing the Fish and Potatoes

   • Soak the salted codfish overnight.
   • In a saucepot, put the peeled potatoes and cover with water.
   • Boil the potatoes until they are three quarters cooked.
   • Drain the fish, and add to the potatoes.
   • Simmer until the potatoes and fish are fully cooked.
   • After straining the fish and potatoes, put the mixture in a very low oven for about 10 minutes.
   • In a bowl, put the fish and potatoes, and add the chili peppers, chopped fried onions, thyme, and chopped parsley.
   • Add salt and pepper to taste.

2. Putting the Dish Together

   • Mix together the bowl ingredients using a potato masher or electric mixing machine.
   • Use this mixture by rolling it into 1 or 2 oz. balls, or into 4 oz. fish cakes.
   • To cook, roll the balls or cakes in flour, and deep fry until golden brown.
