Ingredients
- Yield:

Pie Base (Pate Brise Dough)
- Flour - 375 g
- Sugar - 15 g
- Salt - 12 g
- Butter - 290 g
- Egg yolks - 3
- Milk - 20 ml

Spiced Maple Pumpkin Pie Mix
- Maple syrup - 900 g
- Flour - 153 g
- Salt - 18 g
- Pumpkin puree - 2000 g
- Eggs - 8
- Egg yolks - 160 g
- Cream - 2600 ml
- Cinnamon (ground) - 8 g
- Nutmeg (ground) - 4 g
- Clove (ground) - 4 g
- Dry ground ginger - 4 g
Preparation

Pie Crust
- Mix all the ingredients for the pie crust except yolks and milk
- Mix till it forms a crumble; add the liquids and mix till just combined. Do not over mix the dough
- Wrap the dough in plastic wrap and refrigerate for 2-3 hrs
- Work the dough till its soft enough to be rolled
- Roll the dough on a flour dusted surface to 4 mm thickness
- Line the pie dish with the rolled dough, place a parchment and fill with baking beans
- Bake at 300 F for 14 minutes, take the parchment and the beans out and set aside

Spiced Maple Pumpkin Pie Mix
- In a large bowl mix together all ingredients till a smooth paste
- Pour into the pre-baked pie shells and bake at 270 F until the filling is set, about 15-20 minutes
- Refrigerate, serve with whipped cream
