Sesame Seed Panna Cotta with Coffee Jelly and Kahlua’s Cream

• For Panna Cotta

  • Whipping Cream 800ml/ 3 ¼ cups
  • Roasted Sesame Seed 150 g/ 1 cup
  • Granulated Sugar 130 g/ ½ cup 4 Tablespoon
  • Vanilla Extract 10 g / 1 Tablespoon
  • Unflavored Gelatin 20 g / 5 Teaspoon

• For Coffee Jelly

  • Espresso Coffee 125 g / ½ cup
  • Unflavored Gelatin 5g / 1 ½ Teaspoon

• For Garnishing

  • Kahlua Coffee Cream Liqueur
  • 12 Fresh Raspberries
  • White chocolate shavings
  • 5 Fresh Strawberries
  • Whipped cream
  • 4 Cookie Cigarettes
  • Heart shaped decorative candy

1. Panna Cotta

   1. In a large saucepan, incorporate the cream, sugar and roasted sesame seeds over medium heat. Stir until the sugar dissolves completely. Remove from heat.
   2. Carefully pour the mix through a fine mesh strainer into a bowl, discarding solids. Stir in the vanilla essence.
   3. Dissolve gelatin in hot water (as per instructions on packer). One gelatin is fully dissolved, add it to the panna cotta mixture. Stir well.
   4. Pour panna cotta into wine glasses / Ramekins / Bowls. Leave to set in fridge for 2 hours

2. For Coffee Jelly

   1. Dissolve gelatin in espresso coffee, cool to room temperature.

3. Bringing it together

   1. Pour coffee jelly over panna cotta and let it settle in the refrigerator, covered, for at least 30 minutes. Before serving, divide the Kahlua Coffee Cream Liqueur among the four desserts and garnish with fresh raspberries, strawberries, whipped cream, white chocolate shavings and cookie cigarettes. Enjoy!
