New England Apple Tart

• For the Tarts

  • ½ sheet butter puff dough
  • 5 medium New England Macoun or Cortland apples
  • 1 cup granulated sugar
  • 1 cup melted, unsalted butter
  • 1 lemon, juiced

• For the Caramel

  • 2 cups granulated sugar
  • ½ cup water
  • 1 tsp light corn syrup
  • 1 cup local apple cider

1. For the Tarts

   1. Pre-heat oven to 375 degrees.
   2. Peel, halve and core apples. Brush apples with lemon juice.
   3. Using a fork, poke holes into the puff dough sheet throughout the entire surface.
   4. Line cookie sheet with parchment paper. Using a 4” cookie cutter, cut the puff dough into 10 circles and place onto cookie sheet.
   5. Brush each dough circle with butter and sprinkle with sugar.
   6. Cut each piece of apple into very thin slices, then arrange slices onto dough circle.
   7. Press down on the apples with hand to fan them out and to cover the entire dough circle.
   8. Brush each apple with butter and sprinkle with a good amount of sugar.
   9. Refrigerate apple tarts for 30 minutes before baking them.
   10. Bake apple tarts at 375 for about 15-20 minutes, depending on oven - apples should be soft and sugar on top caramelized.
   11. Let tarts cool for at least 30 minutes.
   12. Serve apple tarts warm with a drizzle of apple cider caramel and a scoop of vanilla, pumpkin, or cinnamon ice cream.

2. For the Caramel

   1. Combine sugar, water, and corn syrup in a small saucepan.
   2. Cook over medium-high heat, stirring, until mixture turns amber. Remove from heat.
   3. Carefully stir in apple cider - watch out for splash, mixture will be extremely hot!
   4. Let cool.
