Cozy up by the fire this holiday season with a bowl of Honey Truffle Popcorn. To make it extra special, use Empress Honey which is prepared by our resident honey bees. It is known to have a caramel-butter flavour and is darker in nature from the ivy and abundance of roses in the garden. The hotel starts with approximately 800,000 bees, which is doubled by the end of the summer, for a harvest of about 2,500 pounds of honey. The honey is jarred and sold in the on-site Fairmont store and can be sampled at the Royal Tea, an additional course to Afternoon Tea with a trio of cheese, glass of port and fresh honey from the hives. The pastry chef also combines honey, peanut butter and chocolate which is hard to resist, and a micro-brewery lager is also made and can be sampled in the Bengal Lounge.
