Goat cheese and apple tart

Ingredients

• • A roll of puff pastry already spread
  • 200 gr. of goat cheese, cut in ¼ inch slices
  • 2 « Macintosh » apples, not peeled, just cleaned,

• For the onion compote

  • 400gr of minced onion
  • ¼ cup of maple syrup
  • 2 tsp of olive oil

1. 1. Gently cook the onions with olive oil and maple syrup until lightly caramelized. Set aside and refrigerate.
   2. Cut the puff pastry into squares of 6×6 inches
   3. Spread a little onion compote leaving a ½-inch space around the edges.
   4. Top with slices of cheese and apple and sprinkle with cinnamon
   5. In a preheated oven at 380 ℉, bake the pie on a baking sheet with parchment paper for 10-12 min. until the edges are golden brown.
   6. Cut the pie into 6 with a pizza cutter or serve whole.
