Cinnamon Star Cookies

Ingredients

Yield:

30 Cookies

• Cookie Dough

  • 6 cups Ground Almonds
  • 2 cups Sugar
  • Zest of 1/4 of a Lemon
  • 200 gr Brown Sugar
  • 4 tsp Ground Cinnamon
  • 10 tbsp Egg White

• Royal Icing

  • 1.5 cups Icing Sugar
  • 1.5 tbsp Egg White
  • 1/4 tsp Lemon Juice

1. Cookie Dough

   1. Mix together ground almond, zest, sugars and cinnamon powder
   2. Add the egg whites and mix till the dough binds together, Note: Add extra ground almonds if the dough is very sticky
   3. Wrap the dough in plastic wrap and let the dough rest for 20 minutes in a refrigerator
   4. Roll the dough to 7 mm thickness and spread a thin layer of royal icing on top
   5. Freeze the dough for 30 minutes before cutting out the cookies using a star cutter
   6. Place the cookies spaced evenly on a parchment lined baking tray
   7. Rest the cookies for 2 hrs at room temperature before baking
   8. Preheat oven to 300 F
   9. Bake the cookies for 14 minutes. Let the cookies cool down to room temperature before storing in air tight containers

2. Royal Icing

   1. Mix together egg white, sugar and lemon juice and whip till light and fluffy
