Chocolate Fondant with Pear Mint Salad

Ingredients
- Yield:
- Serves 2
Base
- 215g Hazelnut Paste
- 65g Milk Chocolate
- 65g White Chocolate
- 160g Feuilletine
Filling
- 112g Cream
- 260g Dark Chocolate
- 90g Icing Sugar
- 90g Egg Yolks
- 75g Softened Butter
- 90g Warm Water
Pear Salad
- 1 Pear
- 1/2 Vanilla Bean
- 1/2 Tbsp Lemon Juice
- Mint
Preparation
- Difficulty:

- Time:
- 30 Minutes
Base
- Melt first three ingredients in sauce pan
- Add feulletine
- Spread a thin layer evenly on tray
- Let set 30 minutes in fridge
Filling
- Boil cream and melt chocolate (this is a ganache)
- Whip yolks and sugar over bain marie until thick and fluffy
- Add ganache to mixture
- Add butter
- Add water
- Spread filling over base
- Chill for 4 hrs in fridge, cut into wedges with hot knife
Pear Salad
- Dice pear
- Toss with lemon juice, vanilla and chopped mint
- Plate a slice of fondant, place pear mint salad beside and garnish with mint sprig
- Enjoy with a cup of Mint Chocolate Tea (made with Cascade Peppermint tea and cocoa liqueur)
