Brownie Mud Pie

Ingredients
- Yield:
- Serves 6-8
Brownie
- 2/3 cup Chocolate
- 8 Tbsp Butter
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 2 Eggs
- 2/3 cups Flour
- 1/2 tsp Salt
- 1 tsp Vanilla Extract
- Toasted Pecans (for final assembly)
- Mini Marshmallows (for final assembly)
Mousse
- 1 cup Chocolate
- 3 egg Yolks
- 1/4 cup Sugar
- 1 cup Cream, whipped
- 1.5 sheets Gelatin
Ganache
- 1 cup Cream
- 1 1/3 cups Chocolate
Preparation

Brownie
- Melt the chocolate and butter together.
- Stir the sugars and eggs together.
- Mix in the chocolate mixture along with vanilla extract.
- Stir in the sifted dry ingredients.
- Pour into 9" deep round pie pan and bake 325F till firm to the touch.
Mousse
- Melt the chocolate and keep warm.
- Whisk the yolks and sugar together in a heat proof bowl.
- Place bowl on top of a saucepan with simmering water and cook until thick and pale in color whisking continuously.
- Strain into a clean mixing bowl then stir in melted gelatin (soak gelatin sheets in cold water to soften and then melt in microwave) and melted chocolate (mixture will be quite thick).
- Loosen this mixture with 3 – 4 tablespoons of extra cream.
- Fold in whipped cream.
Ganache
- Boil the cream then stir in chocolate until melted.
- *Do not pour all of the ganache in the mud pie – you will need some to glaze the entire pie once assembled.
ASSEMBLY
- Sprinkle toasted pecans on top of the baked brownie followed by the ganache (should be roughly 2 cups).
- Once set, sprinkle mini marshmallows on the ganache and lightly toast with a blowtorch.
- Next pour the chocolate mousse on top and let set.
- Mound the whipped topping on top of the mousse and shape into a dome.
- Glaze with ganache and let set.
