Baked Chocolate Mousse

• • 1/2 cup finely chopped milk chocolate
  • 3/4 cup finely chopped dark chocolate
  • 1/4 cup cocoa butter
  • 4 tbsp Triple Sec
  • 1/2 cup Fresh Orange Juice
  • 10 egg whites
  • 10 egg yolks
  • 1/2 cup sugar
  • 1 cup whipping cream, whipped to soft peaks

1. • Combine both chocolates, liqueur and juice in a bowl; heat gently oven bain Marie; when melted set aside.
   • With Kitchen Aid style mixer, Whip eggs, yolks and sugar on high speed, until light and gains no more volume (5 minutes).
   • Using rubber spatula, fold ½ chocolate mixture into egg mixture. Combine, then fold in remaining chocolate mixture until well combined; fold in whipped cream.
   • Pour mix into parchment lined baking pan, cover with tin foil; poke a few air holds in foil and bake in a bain Marie at 300º F for 1 hour and 45 minutes.
   • Cool and set in freezer overnight.
