Crab and avocado cocktail with lime sorbet

50 gr - crab meat
5gr - orange tobico caviar
2gr - lemon juice
5gr - mayonnaise
50gr - avocado-medium size-peeled
2gr - lime juice
25gr - lime sorbet
salt
pepper

Put the avocado in the bowl of food processor and process until smooth.
Add lime juice and season with salt and pepper, transfer to the bowl, cover and chill.
Combine the crabmeat with mayonnaise in a bowl, add lemon juice and season with salt and pepper.
To serve, spoon avocado puree into martini glasses, add a layer of crab mixture and top with a quenelle of lime sorbet
Garnish with caviar.
