Citrus Glazed Baby Vegetables

• • 2 Tbsp butter
  • 2 Tbsp honey
  • 1 orange juiced and orange zest
  • 1 tbsp sherry
  • 1 tsp fresh parsley and thyme minced
  • ½ tsp minced garlic
  • ½ tsp minced shallots

1. 1. Blanch vegetables in salted boiling water until al dente then immediately cool down in ice water bath.
   2. Rub skins off turnips and beets with a clean cloth.
   3. Cut vegetables into uniform shapes.
   4. Sweat garlic and shallots in butter until they start to take on a caramelized color.
   5. Add sherry, orange juice, zest, herbs and honey and reduce until you achieve a sticky consistency.
   6. Add your vegetables to glaze and toss until evenly coated.
   7. Roast in a 375 F oven for 10 minutes.
