Yield:
500g
Simple Syrup
1L water
500g white sugar
Dried Cranberries
500g fresh cranberries
1L simple syrup
hot cayenne powder (optional)

Simple Syrup
Combine water and sugar and bring to a boil
Remove from heat once sugar has completely dissolved
Let cool to room temperature
Dried Cranberries
Line a baking sheet with paper towel and sheet of parchment (paper towel directly on top of baking sheet, and parchment on top of paper towel)
Place cranberries in boiling simple syrup and blanch for 3 to 5 minutes or until the majority of the cranberries have popped
Strain off simple syrup and place cranberries on baking sheet in a single layer
For any of the cranberries that did not pop in the syrup, pierce with a knife to release the air inside
Dust with dried cayenne powder (optional)
Turn oven on to its lowest temperature setting (usually 150 degrees F)
Place cranberries in oven and leave over night or for a minimum of 8 hours, until completely dried out
Check berries for moisture regularly to determine when to stop cooking
After cranberries have dried out, cool and place in a sealed airtight container, and enjoy as a healthy snack
