Candy Cane Meringue Kisses

Ingredients

Yield:

150 meringues

• • 300ml egg whites
  • ¼ tsp or 1 pinch cream of tartar
  • 2 cups plus 1 Tbsp granulated sugar
  • 3 cups and 1/3 cup icing sugar, sifted
  • 1 tsp vanilla
  • 1 tsp natural peppermint flavour
  • ¼ cup mini chocolate chips, optional

1. 1. Whip egg whites with pinch of cream of tartar
   2. Add half sugar when foamy, and half when peaks start to form
   3. Whip to stiff peak and stir in peppermint and vanilla extracts
   4. Gently fold in sifted icing sugar, and mini chocolate chips if desired
   5. To get a candy cane effect on kisses paint plain round tip and piping bag with green and red gel food colouring lines with a small paint brush before filling bag with meringue mix
   6. Pipe into desired shapes, we chose kisses with a #6 round tip
   7. Dry 3-4 hours in a 160F oven, alternately kisses can be baked at 225F for 30 minutes
