Brioche and Chorizo Stuffing

Ingredients

Yield:

8-10 portions

• • 1 loaf brioche bread cubed
  • 220 grams chorizo sausage meat
  • ½ cup butter
  • 1 onion small diced
  • 1 carrot small diced
  • 1 celery stick small diced
  • 4 cloves of garlic sliced
  • 2 cups chicken stock
  • ¼ cup fresh sage and fresh thyme

1. 1. In a large sauce pot cook chorizo sausage meat over medium heat until cooked.
   2. Remove from pot and reserve.
   3. Heat butter and sauté onions, carrot and celery until translucent.
   4. Add garlic and herbs then cook for two minutes.
   5. Add chicken stock and bring to a simmer.
   6. Add brioche and chorizo and mix well.
   7. Stuffing should be moist throughout. (If it seems dry then add more chicken stock)
