Bourbon Peach Chutney

Ingredients

• • 1 Large Can Peaches, Drained and Diced
  • 350g ( 12 oz) Diced Onion
  • 3 Tblsp Finely Minced Ginger
  • 1 Teaspoon Cinnamon
  • 454g ( 1 pound) Brown Sugar
  • 1 Bottle ( 595ml) Rice Vinegar
  • 250 ml ( 1 cup) Maker’s Mark Bourbon

1. 1. Sweat onions until softened. Add ginger and cinnamon.
   2. Add brown sugar, vinegar, peaches and 2/3 of the bourbon.
   3. Cook until most of the liquid has evaporated off.
   4. Finish with the rest of the bourbon to taste.
   5. Cool down. Cover, label, and date.
