Ingredients
Yield:
1 jar
1 Large Can Peaches, Drained and Diced
350g ( 12 oz) Diced Onion
3 Tblsp Finely Minced Ginger
1 Teaspoon Cinnamon
454g ( 1 pound) Brown Sugar
1 Bottle ( 595ml) Rice Vinegar
250 ml ( 1 cup) Maker’s Mark Bourbon
Preparation

45 Minutes
Total Time:
90 Minutes
Sweat onions until softened. Add ginger and cinnamon.
Add brown sugar, vinegar, peaches and 2/3 of the bourbon.
Cook until most of the liquid has evaporated off.
Finish with the rest of the bourbon to taste.
Cool down. Cover, label, and date.
