BBQ Like a Pro

It’s BBQ season, so we asked some of our Fairmont chefs to share their signature BBQ sauces, marinades and rubs with us! Here you’ll find a selection of simple recipes that will make outdoor grilling even better this summer.

Smoked Honey BBQ Sauce  
Looking for the perfect BBQ sauce to satisfy your taste buds this summer? In the Stanley Thompson Smokehouse, down at the Fairmont Banff Springs Golf Course, we use Chef jW Foster’s special recipe that incorporates authentically local smoked honey and ripe peaches. This sauce can be prepared up to three days in advance to save on time and is absolutely delicious on grilled ribs!    

Chef Eric Beaupré’s Quebec BBQ Sauce
This tasty BBQ sauce was designed by Fairmont Tremblant’s Executive Sous Chef, Eric Beaupré. Eric uses this sauce at home and in the restaurant for many BBQ specialties, but its tangy and sweet flavours are best on ribs. It’s the very best Quebec BBQ sauce because it combines two local ingredients, maple syrup and Rivière Rouge Beer!

Chef Laurent Poulain’s Honey Mint Chimichurri Steak Sauce
For a fresh take on summer steak, Fairmont Copley Plaza’s Executive Chef, Laurent Poulain, loves to whip up his honey mint chimichurri. The bite of mint and jalapeño are balanced by the sweetness of the honey, harvested from the hotel’s rooftop beehives. This quick and simple recipe will soon be a staple in your summer barbecues! 

Sichuan Peppercorn Barbecue Sauce 
The perfect sauce for slow-cooked barbecue pork ribs, char-broiled chicken legs or grilled flank steak, this Sichuan Peppercorn BBQ Sauce from Fairmont Chateau Whistler will have your mouth watering before you even try it! 

Peach & Bourbon Barbecue Sauce
For a tasty summer meal, the culinary team at The Fairmont Dallas loves this special Peach & Bourbon Barbecue Sauce. This time-perfected recipe incorporates authentic Texan flavors, using fresh jalapeño peppers grown in the hotel’s 3,000 square-foot rooftop herb and vegetable garden. This Peach & Bourbon Sauce is simple to make at home and is ideal for barbecued and grilled meats.

Hawaiian Steak Rub
The Paniolo (Hawaiian cowboys) traditionally used a simple steak rub to cure and sun-dry beef on the islands. The Fairmont Kea Lani has adapted the rub which uses Hawaiian sea salt and turbinado sugar, resulting in a wonderful flavor and caramelization.

Tangy Mango BBQ Sauce
Chef Tamara Philipp’s tangy mango BBQ sauce has a bold sweet, spice and is perfect for BBQ ribs and chicken wings.  Available on menu items at The Dock at The Waterlot.  

Fairmont Le Château Montebello’s BBQ Pork Chop
There’s nothing better than a succulent pork chop seared on the grill and accompanied by a delicious BBQ sauce, containing a bold blend of flavours, such as garlic and rosemary. At Fairmont Le Château Montebello’s bistro, La Seigneurie, Chef Éric Cromer serves daily specials like this one. Guests can also enjoy delicious BBQ fare on the beautiful outdoor terrace.
